Zero Point Cheesecake

You are probably staring at this right now thinking, “Is this a misprint??” We assure you, it’s not. Since Weight Watchers have put Greek yogurt and eggs on the zero points list, this allows our little variation to pass for zero points. This serves 8 so keep in mind that 1/8 of the cheesecake is zero points.

INGREDIENTS:
  1. 3 eggs
  2. 3 cups fat free, no added sugar, plain Greek yogurt
  3. 1 small box of fat free, sugar free, instant cheesecake pudding flavor
  4. 3 tablespoons of Stevia or Splenda
  5. 1 tablespoon of vanilla or almond extract
DIRECTIONS:
  1. Preheat oven to 350 degrees
  2. Spray a pie dish or 9 inch spring form pan with a non-fat cooking spray
  3. In a large bowl, mix eggs, Stevia, and vanilla extract, beat well
  4. Add dry pudding mix and yogurt, mix well
  5. Pour into dish and bake for 30 minutes
  6. Allow to cool completely, then place in refrigerator
  7. Chill for a minimum of 2 hours or overnight
